- In a mixing bowl, combine rolled oats, chocolate hemp seeds, pumpkin seeds, nut butter, honey or maple syrup, cocoa powder, vanilla extract, and a pinch of salt.
- Mix all the ingredients well until a sticky dough forms.
- Once combined, use your hands to roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to let them firm up.
Notes
Store in an airtight container in the fridge for up to a week or freeze for longer storage. Let them sit for a minute to thaw when taken out of the freezer. For variations, add nuts or dried fruit, or use different seed types.
