  • 1 cup rolled oats
  • 1/2 cup chocolate hemp seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup nut butter (like almond or peanut) Melted for easier mixing.
  • 1/3 cup honey or maple syrup Can be swapped with agave nectar for vegan option.
  • 1/4 cup cocoa powder Can be replaced with carob powder.
  • 1/2 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation
  1. In a mixing bowl, combine rolled oats, chocolate hemp seeds, pumpkin seeds, nut butter, honey or maple syrup, cocoa powder, vanilla extract, and a pinch of salt.
  2. Mix all the ingredients well until a sticky dough forms.
  3. Once combined, use your hands to roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to let them firm up.

Notes

Store in an airtight container in the fridge for up to a week or freeze for longer storage. Let them sit for a minute to thaw when taken out of the freezer. For variations, add nuts or dried fruit, or use different seed types.
