A cheesy explosion wrapped in a warm tortilla, this Grilled Cheese Burrito combines seasoned beef, rice, and plenty of gooey cheese for a quick and satisfying meal.

Main Ingredients
  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 packet taco seasoning Or use a homemade blend for freshness.
  • 1 cup cooked white rice Leftover rice works perfectly.
  • 1/2 cup sour cream Can be substituted with Greek yogurt.
  • 1/2 cup nacho cheese sauce For extra creaminess.
  • 1/4 cup chipotle sauce Adjust to taste for spiciness.
  • 1 cup shredded cheddar cheese For maximum cheesy goodness.
  • 1 cup shredded mozzarella Can swap for pepper jack cheese for a kick.
  • 4 large flour tortillas Make sure they're large enough to hold filling.
  • as needed Butter or oil For grilling the burritos.

Method
 

Cooking the Beef
  1. Brown the ground beef in a skillet over medium heat.
  2. Drain excess grease.
  3. Add taco seasoning and 1/4 cup water, simmer for 5 minutes.
Warming the Tortillas
  1. Heat tortillas on a dry skillet or in the microwave for flexibility.
Assembling the Burrito
  1. Lay a tortilla flat and layer with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream.
  2. Top with shredded cheddar and mozzarella.
Grilling the Burrito
  1. Heat a clean skillet and sprinkle 2 tbsp of shredded cheese.
  2. Place the burrito seam-side down and cook until cheese melts and forms a crispy crust.
  3. Flip and repeat on the other side.

Notes

Serve with a side of spicy salsa and crunchy tortilla chips for an extra kick! Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat in an air fryer or pan to keep it crispy.
