Ingredients
  

Main Ingredients
  • 2 cups cooked quinoa or rice
  • 1 pound boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cucumber diced
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish
For Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cucumber grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the grill or skillet over medium heat.
  2. In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper.
  3. Toss chicken breasts in the marinade until well coated and grill or cook in the skillet until fully cooked, about 6-7 minutes per side.
  4. In the meantime, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, salt, and pepper in a bowl.
  5. Once the chicken is cooked, slice it.
Assembly
  1. Assemble bowls by layering cooked quinoa or rice, grilled chicken, diced cucumber, cherry tomatoes, red onion, and feta cheese.
  2. Top with tzatziki sauce and fresh parsley.
  3. Serve warm or cold for meal prep.

Notes

Store in the fridge for up to three days. For longer storage, freeze without the tzatziki sauce. Reheat with a drizzle of olive oil to keep moist.
