Preparation
- Preheat the grill or skillet over medium heat.
- In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper.
- Toss chicken breasts in the marinade until well coated and grill or cook in the skillet until fully cooked, about 6-7 minutes per side.
- In the meantime, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, salt, and pepper in a bowl.
- Once the chicken is cooked, slice it.
Assembly
- Assemble bowls by layering cooked quinoa or rice, grilled chicken, diced cucumber, cherry tomatoes, red onion, and feta cheese.
- Top with tzatziki sauce and fresh parsley.
- Serve warm or cold for meal prep.
Notes
Store in the fridge for up to three days. For longer storage, freeze without the tzatziki sauce. Reheat with a drizzle of olive oil to keep moist.
