Ingredients
  

Main Ingredients
  • 1 cup red lentils Rinse and soak before use.
  • 1 cup quinoa Rinse thoroughly before mixing.
  • 1/2 cup water Use to blend with lentils and quinoa.
  • 1/4 cup olive oil Can be substituted with another oil if desired.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon baking powder Provides leavening.
  • 1/2 teaspoon garlic powder Optional for flavor.
  • 1/2 teaspoon onion powder Optional for flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Rinse the red lentils and quinoa under cold water and drain well.
  3. In a blender or food processor, blend the lentils and quinoa with water until smooth.
  4. Add olive oil, salt, baking powder, garlic powder, and onion powder. Blend again until well combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Let it cool before slicing and enjoy as a snack or side.

Notes

For storage, keep in an airtight container in the fridge for 3-5 days or slice and freeze for up to 3 months. For the best flavor, serve warm with butter or olive oil.
