Ingredients
  

Dough Ingredients
  • 2 cups gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil or vegan butter Use vegan butter for a vegan option.
  • 3 tablespoons sugar
  • 1/2 cup almond milk or any dairy-free milk
  • 1 tablespoon vanilla extract
Filling Ingredients
  • 1 tablespoon cinnamon
  • 1/4 cup sugar (for the filling)
Glaze Ingredients
  • 1 cup powdered sugar
  • 2-3 tablespoons almond milk (for the glaze)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix gluten-free flour, baking powder, and salt.
  3. Add coconut oil and sugar, then mix well.
  4. Gradually stir in almond milk and vanilla extract until a dough forms.
Rolling and Filling
  1. Roll the dough into a rectangle on a floured surface.
  2. Sprinkle cinnamon and sugar mixture over the dough.
  3. Roll tightly into a log and cut into pieces.
Baking
  1. Place the rolls on a baking sheet and bake for 20-25 minutes until golden.
Glazing
  1. For the glaze, mix powdered sugar with almond milk until smooth.
  2. Drizzle the glaze over the warm rolls and serve.

Notes

Don’t over-knead the dough to keep it soft and fluffy. You can make these rolls vegan by using plant-based butter and dairy-free milk. Store in an airtight container for 3-4 days in the fridge, or freeze for up to 3 months.
