  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

  • gingerbread spices Can be added for a seasonal flavor.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract (and any optional extracts, if using).
  4. In a separate bowl, mix the gluten-free flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  6. For fun variations, fold in chocolate chips or gingerbread spices.
  7. Scoop cookie dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are lightly golden.
