Ingredients
  

Chicken and Coating
  • 4 pieces chicken breasts Pound thin for even cooking.
  • 1 cup gluten free breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 pieces eggs Beaten.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste Salt and pepper
  • Olive oil for frying Olive oil for frying
Topping
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Beat the eggs in a bowl and set aside.
  4. In another bowl, mix gluten free breadcrumbs with grated Parmesan cheese.
Cooking
  1. Dip each chicken breast into the beaten eggs, then coat with the breadcrumb mixture.
  2. Heat olive oil in a skillet over medium-high heat and cook each chicken breast until golden and crispy, about 4-5 minutes per side.
  3. Place the cooked chicken in a baking dish, cover with marinara sauce, and sprinkle with shredded mozzarella.
  4. Bake in the oven for 15-20 minutes, or until the cheese is bubbly and golden.
