  • 1 cup gluten free flour blend
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
Wet Ingredients
  • 1/2 cup unsalted butter, softened Room temperature for best results.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the gluten free flour, baking soda, salt, cinnamon, cardamom, ginger, and cloves.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes until the edges are lightly golden.
  2. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

For a vegan option, substitute butter with coconut oil and use a flax egg. Experiment with different gluten-free flour blends for varied textures.
