- Bring a large pot of salted water to a boil. Cook spaghetti until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage, crumble it as it cooks, and sauté until browned. Remove and set aside.
- In the same skillet, add butter and minced garlic. Cook for 1 minute until fragrant.
- Add spinach and sauté until wilted.
- Return cooked sausage to the skillet. Add drained spaghetti and toss everything together to coat the noodles in garlic butter.
- Sprinkle mozzarella and Parmesan on top. Cover skillet with a lid and let cheese melt for 2–3 minutes.
- Season with salt and pepper to taste, toss again gently, and serve hot.
Notes
For an adventurous twist, swap the sausage for plant-based alternatives and use vegan butter and cheese. You can also add red pepper flakes for heat or toss in additional vegetables.
