  • 400 g spaghetti
  • 250 g Italian sausage
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 tablespoons butter garlic-infused
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage, crumble it as it cooks, and sauté until browned. Remove and set aside.
  3. In the same skillet, add butter and minced garlic. Cook for 1 minute until fragrant.
  4. Add spinach and sauté until wilted.
  5. Return cooked sausage to the skillet. Add drained spaghetti and toss everything together to coat the noodles in garlic butter.
  6. Sprinkle mozzarella and Parmesan on top. Cover skillet with a lid and let cheese melt for 2–3 minutes.
  7. Season with salt and pepper to taste, toss again gently, and serve hot.

Notes

For an adventurous twist, swap the sausage for plant-based alternatives and use vegan butter and cheese. You can also add red pepper flakes for heat or toss in additional vegetables.
