  • 3 cups cooked white rice Substitute with brown rice for nuttiness.
  • 2 cups shredded cooked chicken Use rotisserie chicken or leftover turkey.
  • 1 can cream of chicken soup Low-sodium or homemade alternatives.
  • 1 can French onion soup
  • 1 cup sour cream Dairy-free yogurt can be used.
  • 1 cup shredded cheese Mozzarella or Swiss.
  • 1 cup French fried onions Divide for topping and inside the casserole.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste.
  • 1/4 cup chopped parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, and a sprinkle of salt and pepper.
  3. Stir in 1/2 cup shredded cheese and 1/2 cup French fried onions to the mix.
  4. Spread the mixture into a greased 9×13 inch baking dish, ensuring it’s even.
  5. Top with the remaining shredded cheese and French fried onions.
Baking
  1. Bake for about 30-35 minutes, or until bubbly and golden.
  2. Remove from the oven and garnish with fresh parsley before serving.

Notes

This bake can be stored in the fridge for about 3-4 days and can be frozen for up to 3 months. Consider mixing in veggies like peas or broccoli for added nutrition or swapping out chicken for grilled tofu for a vegan version.
