Ingredients
  

Main Ingredients
  • 1 cup rolled oats
  • 1/2 cup nut butter (like almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1/4 cup ground flaxseed Use ground flaxseed for better digestion
  • 1/4 cup chia seeds
  • 1/2 cup mini chocolate chips (optional) Omit if desired
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, mix together all the ingredients until well combined.
  2. Let the mixture sit for 10 minutes to thicken.
  3. Using your hands, roll the mixture into small balls (about 1 inch in diameter).
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to set.
Storage
  1. Store in an airtight container in the refrigerator for up to a week.
  2. For longer storage, freeze them and microwave for a few seconds when ready to enjoy.

Notes

Get creative with add-ins like shredded coconut or spices. If the mixture is too dry, add a little more nut butter or honey. Adjust sizing of bites to your preference.
