  • 1 pound Italian sausage (spicy or sweet)
  • 2 cups bell peppers (mixed red, yellow, green), chopped
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tablespoon Italian seasoning
  • 1 cup mozzarella cheese, shredded (or Parmesan) Optional to use additional cheese on top
  • 2 cups cooked pasta of your choice Optional

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the sliced sausage for about 5-7 minutes.
  3. Add chopped bell peppers and onion; sauté for another 4-5 minutes until softened.
  4. Mix in minced garlic and canned tomatoes; let simmer for 3-4 minutes.
  5. Season with Italian seasoning, salt, and pepper.
  6. Combine with shredded cheese if desired.
  7. Transfer the mixture to a baking dish, top with additional cheese if preferred.
  8. Bake uncovered for 25-30 minutes until bubbly and golden.

Notes

This casserole keeps well in the fridge for up to 3-4 days. For longer storage, freeze it for up to 3 months. Reheat in the oven or microwave until heated through.
