Preparation
- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
- In a mixing bowl, combine the pumpkin seeds, honey (or maple syrup), peanut butter (or almond butter), oats, and salt. Mix well until combined.
- Pour the mixture into the prepared baking dish and press down firmly into an even layer.
- Bake for 15-20 minutes or until the edges are golden.
- Allow to cool completely before cutting into bars.
Notes
For an Instagram-worthy breakfast, break bars into pieces and add to yogurt or smoothie bowls. Store in an airtight container for up to a week or freeze for longer storage, separating bars with parchment paper.
