  • 1 cup pumpkin seeds
  • 1/2 cup honey or maple syrup Choose your preferred sweetener
  • 1/4 cup peanut butter or almond butter Use your favorite nut butter
  • 1/2 cup oats Use certified gluten-free oats for a gluten-free version
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine the pumpkin seeds, honey (or maple syrup), peanut butter (or almond butter), oats, and salt. Mix well until combined.
  3. Pour the mixture into the prepared baking dish and press down firmly into an even layer.
  4. Bake for 15-20 minutes or until the edges are golden.
  5. Allow to cool completely before cutting into bars.

Notes

For an Instagram-worthy breakfast, break bars into pieces and add to yogurt or smoothie bowls. Store in an airtight container for up to a week or freeze for longer storage, separating bars with parchment paper.
