Ingredients
  

Dry Ingredients
  • 300 g mixed seeds (sunflower, sesame, linseeds, chia, pumpkin)
  • 50 g desiccated coconut
  • 50 g mixed nuts (pine nuts, hazelnuts, chopped if large)
  • 1 tsp cinnamon, ginger, or any sweet spice
  • 1 tsp vanilla extract
  • ¼ tsp salt
Wet Ingredients
  • 2 tbsp coconut oil (warmed to a liquid state)
  • 175 g honey

Method
 

Preparation
  1. Preheat your oven to 165°C (325°F).
  2. Prepare your baking sheet by lining it with parchment paper or a non-stick liner.
Mixing
  1. In a large bowl, mix your dry ingredients: seeds, coconut, nuts, spice, vanilla, and salt.
  2. Whisk together the warmed coconut oil and honey, then pour it over the dry mix.
  3. Stir everything until well combined and spread it out on the lined baking sheet.
Baking
  1. Bake for about 20-25 minutes until golden brown, rotating the tray halfway through.
  2. Cool completely before breaking into pieces.

Notes

Store in an airtight container at room temperature for about a week. For longer storage, freeze leftovers.
