Ingredients
  

For the filling
  • 2 cups Shredded Chicken Any pre-cooked shredded chicken works well.
  • 1/2 cup Diced Bell Pepper
  • 1/3 cup Diced Red Onion
  • 1/4 cup Mayo Use avocado oil mayo for a healthier option.
  • 3 tablespoons Lime Juice Fresh squeezed is best!
  • 2 tablespoons Chopped Cilantro
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
For assembly
  • 8 pieces Cassava Flour Tortillas Recommended brands are Siete Foods and Rise & Puff.

Method
 

Preparation
  1. In a large bowl, add all the filling ingredients and mix together with a stiff spatula or spoon.
  2. Place a cast iron or nonstick skillet over medium heat and spray it with avocado oil or olive oil. Preheat the skillet.
  3. Wrap two tortillas in a damp paper towel and microwave for about 15-20 seconds to make them pliable.
Assembly
  1. Take a warm tortilla, add a spoonful of the chicken mixture, and roll it up tightly. Repeat until all tortillas are filled.
Cooking
  1. Place the taquitos seam-side down in the skillet. Cook for about 5 minutes until golden brown, then flip and cook for an additional 4-5 minutes.
  2. Serve over a bed of fresh romaine lettuce with guacamole and salsa. Enjoy!

Notes

Make sure the tortillas are warmed up to prevent tearing. For added crispiness, brush taquitos with a little oil before frying. Extra filling can be used in salads or wraps.
