Preparation
- In a large bowl, add all the filling ingredients and mix together with a stiff spatula or spoon.
- Place a cast iron or nonstick skillet over medium heat and spray it with avocado oil or olive oil. Preheat the skillet.
- Wrap two tortillas in a damp paper towel and microwave for about 15-20 seconds to make them pliable.
Assembly
- Take a warm tortilla, add a spoonful of the chicken mixture, and roll it up tightly. Repeat until all tortillas are filled.
Cooking
- Place the taquitos seam-side down in the skillet. Cook for about 5 minutes until golden brown, then flip and cook for an additional 4-5 minutes.
- Serve over a bed of fresh romaine lettuce with guacamole and salsa. Enjoy!
Notes
Make sure the tortillas are warmed up to prevent tearing. For added crispiness, brush taquitos with a little oil before frying. Extra filling can be used in salads or wraps.
