Preparation
- In a bowl, whisk together the warm water, yeast, and sugar until dissolved. Let it sit for about 10 minutes until it’s nice and frothy.
- In a large bowl, combine the flour, salt, baking powder, the yeasted water, xanthan gum, vinegar, and eggs. Mix with a wooden spoon or your hands.
- Cover the dough and let it sit on your counter for about 50 minutes until it is puffed.
Baking
- Preheat your oven to 450 degrees and place a Dutch oven inside as it heats up.
- Place a piece of parchment paper on your counter and dust it with gluten-free flour. Scrape your dough out of the bowl and form it into a ball.
- Slice a couple of small cuts on the top of your dough.
- Place the dough (with parchment paper) into your hot Dutch oven.
- Bake covered for 45 minutes, then uncover and bake for an additional 5 minutes for that perfect crust.
- Remove from the oven and let it cool completely on a wire rack before slicing.
Notes
Tips: Use room temperature ingredients for a better rise. Try different gluten-free flours for unique flavors. Don’t rush the resting time.
