Easy Chicken Burrito Casserole

Ingredients
  

Vegetables
  • 1/2 cup finely diced onion
  • 1 red bell pepper, diced
Grains
  • 1 cup uncooked parboiled long-grain brown rice Can also use long grain white rice
Seasonings
  • 3 tablespoons fajita seasoning Homemade or store-bought
  • 1/8 teaspoon cayenne pepper Optional
Canned Goods
  • 1 cup corn kernels Frozen
  • 1 14-ounce can low sodium black beans Drained and rinsed
  • 1 4-ounce can mild green chilies
  • 2 tablespoons tomato paste
Protein
  • 5 cups shredded chicken
Liquids
  • 3 cups reduced sodium chicken broth
  • 1 tablespoon olive oil
Cheese
  • 1 1/4 cups shredded Monterey Jack cheese

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. In a 9x13 inch baking dish, add the onion, bell pepper, uncooked rice, fajita seasoning, and cayenne (if using) and stir to combine.
  3. In a separate bowl or measuring cup, whisk together the chicken broth, green chiles, tomato paste, and olive oil until smooth.
  4. Pour the broth mixture into the baking dish and stir until everything is combined.
  5. Add the shredded chicken, black beans, and corn to the dish and mix well.
Baking
  1. Cover the baking dish with aluminum foil and bake for 65-70 minutes or until the liquid is absorbed.
  2. Remove the baking dish from the oven, take off the foil, and sprinkle the grated cheese evenly on top.
  3. Return it to the oven for another 5-10 minutes until the cheese has melted and turned golden.
  4. Let it cool for 5-10 minutes before serving, and top with fresh cilantro, green onion, salsa, and avocado if desired.

Notes

Let the casserole sit for a few minutes before serving to thicken. You can make it vegan-friendly by using chickpeas or tofu instead of chicken and replacing the cheese with a plant-based alternative.
