Preparation
- Remove chicken from the refrigerator 20 minutes before cooking. Pat completely dry with paper towels.
- Season both sides with salt. Wait 2 minutes, then sprinkle on the remaining spices.
- Preheat your oven to 400°F with the rack in the center position.
- Brush a baking sheet with 1 tablespoon of olive oil. Arrange chicken thighs with a little space between each piece. Drizzle with the remaining oil.
Cooking
- Bake for 18 minutes. Flip the thighs and bake for an additional 14 minutes.
- Check the internal temperature—it should reach 175°F at the thickest part.
- Tent with foil and let rest for 3 minutes before serving.
