Wet Ingredients
  • 0.5 cups unsalted butter Helps create a moist texture.
  • 0.75 cups granulated sugar Sweetens the bread.
  • 2 large eggs Binds the ingredients for a fluffy texture.
  • 1 teaspoon vanilla extract Adds depth to the flavor.
  • 1 cup mashed ripe bananas About 3 medium bananas.
Optional Ingredients
  • 0.5 cups chopped walnuts or pecans Optional for crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Stir to mix.
  3. In another bowl, beat together the butter and sugar until creamy.
  4. Add the eggs and vanilla extract to the butter mixture, and mix until combined.
  5. Stir in the mashed bananas until smooth.
  6. Gradually add the dry mixture to the wet mixture until just combined.
  7. Fold in the nuts, if using.
  8. Pour the batter into a greased loaf pan and smooth the top.
Baking
  1. Bake for 60-70 minutes or until a toothpick comes out clean.
  2. Let it cool before slicing.

Notes

Serve with butter or cinnamon sugar. Store in the fridge for 3-5 days or freeze for up to 3 months.
