Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Stir to mix.
- In another bowl, beat together the butter and sugar until creamy.
- Add the eggs and vanilla extract to the butter mixture, and mix until combined.
- Stir in the mashed bananas until smooth.
- Gradually add the dry mixture to the wet mixture until just combined.
- Fold in the nuts, if using.
- Pour the batter into a greased loaf pan and smooth the top.
Baking
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
Serve with butter or cinnamon sugar. Store in the fridge for 3-5 days or freeze for up to 3 months.
