Ingredients
  

Vegetables and Cheese
  • 1 piece English cucumber or 2 Persian cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 8 oz mozzarella pearls (or cubed fresh mozzarella)
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh basil leaves, torn or chopped
Dressings and Seasoning
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (or reduction)
  • Salt and freshly ground black pepper, to taste
  • Optional: crushed red pepper flakes for a little kick

Method
 

Preparation
  1. Slice the cucumbers, halve the tomatoes, and thinly slice the red onion.
  2. In a large bowl, combine the sliced cucumber, halved tomatoes, mozzarella, onion, and basil.
  3. Drizzle everything with olive oil and balsamic glaze. Season with salt, pepper, and optional red pepper flakes for heat.
  4. Toss gently until all the ingredients are coated in the dressing.
  5. Serve immediately, or chill in the fridge for 15–30 minutes to meld the flavors.

Notes

This salad is more flavorful when allowed to chill for a bit. Best enjoyed fresh, but can last in the fridge for about 1-2 days if stored properly.
