  • 2 cups fresh spinach Add towards the end to keep it vibrant.
  • 1 cup carrots (sliced) Can substitute with zucchini or bell peppers.
  • 2 cloves garlic (minced) Toasting enhances the flavor.
  • 1 teaspoon Italian seasoning Provides a fragrant flavor.

Method
 

Preparation
  1. Place the chicken in your slow cooker.
  2. Pour in the chicken broth and add the chopped onion, minced garlic, and sliced carrots.
  3. Season with Italian seasoning, salt, and pepper.
  4. Cover, and cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the fresh spinach to wilt and soften.

Notes

Serve with quinoa or brown rice for added fiber. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. Reheat with a splash of broth if needed.
