Preparation
- Place the chicken in your slow cooker.
- Pour in the chicken broth and add the chopped onion, minced garlic, and sliced carrots.
- Season with Italian seasoning, salt, and pepper.
- Cover, and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, add the fresh spinach to wilt and soften.
Notes
Serve with quinoa or brown rice for added fiber. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. Reheat with a splash of broth if needed.
