  • 4 pieces boneless chicken breasts
  • 1 cup sun-dried tomatoes (packed in oil) adds a juicy punch
  • 1 cup chicken broth ensure it is gluten-free if needed
  • 1 cup heavy cream can be substituted with half and half or coconut milk
  • 1 cup grated parmesan cheese
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning for flavor
  • to taste salt and pepper
  • Fresh basil for garnish (optional)

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. In a bowl, whisk together the chicken broth, heavy cream, parmesan cheese, minced garlic, Italian seasoning, and a pinch of salt and pepper.
  3. Pour the mixture over the chicken in the crockpot.
  4. Add the sun-dried tomatoes on top.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  2. Serve warm, garnished with fresh basil if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for 2-3 months. Reheat on the stove or in the microwave.
