  • 1 cup onion, chopped
  • 3 cups beef broth
  • 1 cup heavy cream

  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon paprika

Method
 

Preparation
  1. In a Crockpot, brown the ground beef with the onion and garlic until fully cooked.
  2. Drain excess fat if needed.
Cooking
  1. Add the diced potatoes, beef broth, thyme, paprika, salt, and pepper to the Crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  3. Stir in the heavy cream just before serving.
Serving
  1. Serve hot with crusty bread for dipping.

Notes

For a thicker soup, mash a few potato chunks before adding the cream. Replace the beef with ground turkey or a plant-based option for a healthier twist. Adjust the seasoning to taste for a personalized flavor explosion. Add chopped carrots or celery for extra color and crunch.
