  • 2 pieces chicken breasts, diced
  • 4 medium potatoes, peeled and diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream

Method
 

Preparation
  1. In a crockpot, combine chicken, potatoes, onion, garlic, and chicken broth.
  2. Season with salt and pepper.
  3. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is cooked through and potatoes are tender.
  4. Stir in heavy cream and let cook for an additional 30 minutes.
  5. Serve hot, topped with crispy bacon, shredded cheese, and a dollop of sour cream.

Notes

This soup keeps well in the fridge for 3-4 days. For make-ahead, prep everything the night before and toss into the crockpot in the morning. Can freeze for up to 3 months.
