Preparation
- Season the chuck roast generously with salt and pepper.
- In a skillet over medium-high heat, heat the olive oil.
- Sear the chuck roast on all sides until browned (about 3-4 minutes per side).
- Place the chopped onion, garlic, carrots, and potatoes in the bottom of the Crock Pot.
Cooking
- Lay the seared chuck roast on top of the vegetables.
- Pour in the beef broth and Worcestershire sauce, adding any optional ingredients if desired.
- Cover the Crock Pot and cook on low for 8-10 hours or on high for 4-6 hours.
- Check for doneness; the roast should be fork-tender and easily shreddable.
- Remove the roast and veggies. Allow the meat to rest for a few minutes, then slice or shred before serving.
Notes
Serve with a side of steamed green beans or a crisp garden salad for added texture. Store leftovers in an airtight container for 3-4 days or freeze for up to six months.
