  • 2 cups beef broth Or beef stock for richer flavor
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

  • 1 cup red wine For a richer sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Fresh herbs (like thyme or rosemary) Optional for flavor enhancement

Method
 

Preparation
  1. Season the chuck roast generously with salt and pepper.
  2. In a skillet over medium-high heat, heat the olive oil.
  3. Sear the chuck roast on all sides until browned (about 3-4 minutes per side).
  4. Place the chopped onion, garlic, carrots, and potatoes in the bottom of the Crock Pot.
Cooking
  1. Lay the seared chuck roast on top of the vegetables.
  2. Pour in the beef broth and Worcestershire sauce, adding any optional ingredients if desired.
  3. Cover the Crock Pot and cook on low for 8-10 hours or on high for 4-6 hours.
  4. Check for doneness; the roast should be fork-tender and easily shreddable.
  5. Remove the roast and veggies. Allow the meat to rest for a few minutes, then slice or shred before serving.

Notes

Serve with a side of steamed green beans or a crisp garden salad for added texture. Store leftovers in an airtight container for 3-4 days or freeze for up to six months.
