Ingredients
  

Main Ingredients
  • 4 pieces small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced Fresh garlic is recommended.
  • 1 cup light cream or heavy cream Can substitute with Greek yogurt for a lighter option.
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated For a non-dairy option, use nutritional yeast.
  • 1 cup spinach, chopped (optional) Adds color and nutrition.

Method
 

Prepare the Chicken
  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken and cook for 5-6 minutes per side until golden and crispy.
  4. Remove from the skillet and set aside.
Make the Creamy Garlic Sauce
  1. Lower heat and add minced garlic to the pan. Sauté for 30 seconds—don’t let it burn!
  2. Pour in cream while stirring continuously.
  3. Add Italian seasoning and parmesan cheese, mixing until smooth.
  4. Stir in chopped spinach (if using) and simmer for 2-3 minutes.
Combine and Serve
  1. Return the cooked chicken to the pan, spooning sauce over the top.
  2. Simmer for 1 minute, then remove from heat.
  3. Serve hot with pasta, roasted vegetables, or mashed potatoes.

Notes

Leftovers keep well in the fridge for up to 3 days in an airtight container. Can be frozen for about 2 months. Reheat on low in a skillet.
