Prepare the Chicken
- Season chicken with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken and cook for 5-6 minutes per side until golden and crispy.
- Remove from the skillet and set aside.
Make the Creamy Garlic Sauce
- Lower heat and add minced garlic to the pan. Sauté for 30 seconds—don’t let it burn!
- Pour in cream while stirring continuously.
- Add Italian seasoning and parmesan cheese, mixing until smooth.
- Stir in chopped spinach (if using) and simmer for 2-3 minutes.
Combine and Serve
- Return the cooked chicken to the pan, spooning sauce over the top.
- Simmer for 1 minute, then remove from heat.
- Serve hot with pasta, roasted vegetables, or mashed potatoes.
Notes
Leftovers keep well in the fridge for up to 3 days in an airtight container. Can be frozen for about 2 months. Reheat on low in a skillet.
