Ingredients

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs whisked
  • 1 cup bread crumbs preferably Italian-style
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
For the Garlic Butter Sauce
  • ½ cup unsalted butter
  • 5 cloves garlic minced
  • ¼ cup fresh parsley chopped (optional)
  • 1 lemon for zest and juice

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry with paper towels.
  3. Set up three shallow dishes: first one with flour, second one with whisked eggs, and the third one with a mixture of bread crumbs, garlic powder, salt, pepper, and Parmesan cheese.
Cooking
  1. Dredge each chicken breast in flour, dip into the whisked eggs, then coat with the bread crumb mixture.
  2. Place the coated chicken breasts on the prepared baking sheet.
  3. Bake for about 25-30 minutes until golden brown and cooked through.
  4. Meanwhile, melt the butter in a medium saucepan over medium heat. Add the minced garlic and sauté until fragrant.
  5. Stir in the lemon juice and zest, then fold in the parsley.
  6. Drizzle the garlic butter sauce over the cooked chicken and serve.

Notes

Use fresh garlic for the sauce for optimal flavor. Consider letting the chicken sit for a few minutes after baking for easier slicing. Swap in panko breadcrumbs for extra crunch if desired.
