  • 1 cup cherry tomatoes, halved

  • 3 cloves garlic, minced Cook until fragrant
  • 1 teaspoon olive oil For sautéing

Method
 

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat and sauté the onion until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the cherry tomatoes, cooking until they begin to soften.
  4. Add the white beans, vegetable broth, and oregano; bring to a boil.
  5. Reduce heat and let simmer for 10 minutes.
  6. Stir in the spinach or kale and let cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.
