  • 4 pieces chicken thighs Bone-in, skin-on recommended for best flavor.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Toast for enhanced flavor.
  • 1 cup heavy cream Can substitute with half-and-half.
  • 1/2 cup grated Parmesan cheese Can use other hard cheeses or nutritional yeast for vegan version.
  • Salt to taste Salt
  • Pepper to taste Pepper
  • Chopped parsley for garnish Chopped parsley Optional garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Sear the chicken thighs on both sides until golden brown, about 5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
Cooking
  1. In the same skillet, add minced garlic and sauté for about 30 seconds.
  2. Pour in the heavy cream and bring to a simmer.
  3. Stir in the Parmesan cheese until melted and smooth.
  4. Return the chicken thighs to the skillet, spooning some sauce over them.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
  6. Garnish with chopped parsley before serving.

Notes

You can store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in the microwave or oven until warmed through.
