  • 1 lb Italian sausage (mild or spicy) Use your preferred level of spiciness.
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced) Toasted for extra flavor.
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream For a lighter option, use half-and-half or coconut milk.
  • 2 cups fresh spinach Added for color and nutrition.
  • ½ cup grated Parmesan cheese For topping.
  • 2 tbsp Olive oil For cooking.

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the diced onion and garlic until translucent, about 3-4 minutes.
  3. Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  4. Stir in the diced carrots and chopped celery. Pour in the chicken broth and bring to a gentle simmer.
  5. Reduce heat slightly and mix in the heavy cream until well combined.
  6. Add fresh spinach and stir until wilted. Serve hot, topped with grated Parmesan cheese.

Notes

Leftovers can be stored in the fridge for about 3-4 days. Can also be frozen for up to three months. To reheat, warm gently on the stove over low heat.
