  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • to taste Green onions or parsley for garnish

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. Toss in the diced potatoes and give it a stir.
  3. Pour in the broth and bring to a boil. Once bubbling, reduce the heat and simmer until the potatoes are tender—about 15-20 minutes should do it!
  4. Stir in the heavy cream and Cajun seasoning.
  5. Use an immersion blender to blend the soup until smooth, or mash the potatoes with a fork for a chunkier bite.
  6. Season generously with salt and pepper to taste.
  7. Serve hot, and don’t forget to top with green onions or parsley for that fancy touch!

Notes

Keep an eye on your potatoes; you want them tender but not falling apart. For a lighter twist, swap the heavy cream for coconut milk. Experiment with different Cajun seasonings for unique flavors.
