  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced Toasting the garlic enhances flavor.
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 cup heavy cream Can substitute with coconut milk for a lighter version.

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, and bell pepper, and sauté until softened.
  2. Stir in the Cajun seasoning and cook for 1 minute to release those mouthwatering flavors.
  3. Add the shredded chicken and chicken broth; bring to a boil.
  4. Reduce heat, then stir in the heavy cream for a creamy texture.
  5. Simmer for 10-15 minutes, seasoning with salt and pepper to taste.
  6. Serve hot, garnished with green onions.

Notes

For added texture, feel free to include diced potatoes or corn. This soup is perfect served with crusty bread for dipping.
