Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the orange juice, brown sugar, soy sauce, salt, pepper, and minced garlic.
Cooking
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Season the chicken breasts with salt and pepper, then sear them in the skillet until golden brown on both sides (about 4-5 minutes per side).
- Pour the cranberry and orange mixture over the chicken and scatter the cranberries around.
- Transfer the skillet to the preheated oven and bake for around 25-30 minutes until the chicken is cooked through (internal temperature of 165°F/74°C).
- Garnish with chopped parsley before serving.
Notes
Leftovers last in the fridge for about 3-4 days or can be frozen for up to 3 months. Reheat in the microwave or a skillet.
