Ingredients

Main ingredients
  • 20 oz cheese tortellini (Fresh or refrigerated varieties yield the best texture and taste.)
  • 1 lb steak (sirloin or ribeye) (Sirloin is leaner; ribeye is more tender.)
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 2 tbsp olive oil (Essential for searing the steak.)
  • 4 tbsp butter (Creates a creamy sauce base.)
  • 5 cloves garlic, minced (Adds aromatic richness.)
  • 1 cup heavy cream (Contributes a velvety smoothness.)
  • 3/4 cup whole milk (Balances the richness.)
  • 1 1/4 cups parmesan, shredded or freshly grated (Brings a savory flavor.)
  • Parsley, chopped (optional) (Brightens the dish.)
  • Red pepper flakes (optional) (For a spicy kick.)
  • Cracked black pepper (optional garnish) (Elevates the flavor.)

Method

Cooking Instructions
  1. In a large pot, boil water and cook the cheese tortellini according to package instructions. Drain and set aside.
  2. Season the steak with salt, pepper, garlic powder, and smoked paprika. Heat olive oil in a large skillet over medium-high heat and sear the steak until cooked to your liking. Remove and let it rest.
  3. In the same skillet, add butter and minced garlic. Sauté until fragrant.
  4. Pour in heavy cream and milk, stirring to combine.
  5. Stir in the parmesan until melted and combined with the sauce.
  6. Slice the steak, return it to the skillet, add the cooked tortellini, and toss everything together.

Notes

Serve with a bright garnish of parsley and a sprinkle of red pepper flakes for an added kick. Can be stored in the fridge for 3-4 days in an airtight container.
