Ingredients
  

Main Ingredients
  • 2 lbs Chicken breasts or thighs, boneless and skinless
  • 1 can Cream of chicken soup
  • 2 cups Chicken broth
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced Toast before using for enhanced flavor
  • 1 tbsp Seasonings (salt, pepper, and favorite herbs) Adjust based on personal taste
Optional Add-ins
  • 2 cups Any veggies (carrots, peas, or spinach) Fresh or frozen can be used
  • 4 cups Cooked rice or pasta For serving

Method
 

Preparation
  1. Chop the onion and mince the garlic.
Cooking
  1. In your crockpot, add the chicken at the bottom.
  2. Pour in the cream of chicken soup and broth, and sprinkle over the seasonings.
  3. Add your chopped veggies if using.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Pull out the chicken and shred it. Mix it back into the crockpot before serving.

Notes

Store in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat on the stove or microwave until piping hot. For variations, use turkey or make a vegan version with chickpeas and vegetable broth.
