Cottage Cheese Protein Bagels

Main Ingredients
  • 1 cup self-rising flour
  • 1 cup full-fat cottage cheese
  • 1 large egg, beaten (for egg wash)
Toppings
  • sesame seeds
  • everything bagel seasoning
  • shredded asiago cheese
  • poppy seeds

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. Blend the cottage cheese in a food processor or blender until smooth.
  3. In a medium bowl, combine the blended cottage cheese and self-rising flour until the dough pulls away from the sides.
  4. Knead the dough on a floured surface for 8-10 times until smooth.
  5. Divide the dough into 4 equal pieces, roll each into a rope, and shape into bagels, sealing the seams.
  6. Brush with the beaten egg and add toppings.
Baking
  1. Bake for about 20 minutes until golden brown.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for a couple of months. For reheating, pop them in the oven or microwave for a few seconds.
