  • 1.5 cups marinara sauce Use your favorite brand or homemade.
  • 1 cup shredded mozzarella cheese Feel free to adjust based on your preference.
  • 0.5 cup grated Parmesan cheese Freshly grated works best for flavor.
  • 2 cloves garlic, minced Adjust according to your taste.
  • 1 teaspoon dried oregano Add more for stronger flavor.
  • 1 teaspoon olive oil Used for sautéing garlic.
  • to taste Salt and pepper Adjust according to taste preferences.
  • Fresh basil (for garnish) Adds freshness and color.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced chicken breast to the skillet. Season with salt, pepper, and dried oregano. Cook until the chicken is browned and cooked through (about 5-7 minutes).
  4. Stir in the marinara sauce and bring to a simmer. Let it bubble for a couple of minutes.
  5. Turn off the heat and mix in the cottage cheese until well combined. Top with shredded mozzarella and sprinkle with grated Parmesan.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and garnish with fresh basil before serving.

Notes

This dish can be made ahead and stored in the fridge for 3-4 days. Freeze leftovers for up to a month, reheating at 350°F (175°C).
