  • 1 cup cottage cheese
  • 2 cups fresh spinach (chopped)
  • 4 large eggs
  • 1 cup shredded cheddar cheese (divided)
  • 1 small onion (finely chopped)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • as needed Nonstick cooking spray for greasing the baking dish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté the chopped onion in a pan over medium heat until softened, about 5 minutes.
  3. In a large bowl, combine cottage cheese, sautéed onion, spinach, eggs, garlic powder, salt, black pepper, and half of the cheddar cheese. Mix well.
  4. Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
  5. Bake for 30-35 minutes until set and golden brown on top.
  6. Let cool slightly before slicing.

Notes

For added flavor, consider adding freshly minced garlic to the sautéed onion. This quiche keeps well in the fridge for 3-4 days or can be frozen for up to 2 months.
