Preparation
- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Sauté the chopped onion in a pan over medium heat until softened, about 5 minutes.
- In a large bowl, combine cottage cheese, sautéed onion, spinach, eggs, garlic powder, salt, black pepper, and half of the cheddar cheese. Mix well.
- Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
- Bake for 30-35 minutes until set and golden brown on top.
- Let cool slightly before slicing.
Notes
For added flavor, consider adding freshly minced garlic to the sautéed onion. This quiche keeps well in the fridge for 3-4 days or can be frozen for up to 2 months.
