  • 2 cloves Garlic Minced
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Milk or Cream For added creaminess
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 2 tablespoons Butter For sautéing

Method
 

Preparation
  1. Peel and dice the potatoes.
  2. Chop them unevenly for a rustic look.
Cooking
  1. In a large pot, melt butter over medium heat and sauté chopped onion and minced garlic until softened.
  2. Add the diced potatoes and broth, then bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Mash or blend the soup to your desired consistency.
  5. Stir in milk or cream, and season with salt and pepper to taste.

Notes

For a thicker soup, blend longer or add less broth. Leftover potatoes can also be used. For a vegan version, swap butter for olive oil and cream for coconut milk.
