Ingredients
  

Pasta and Protein
  • 1 lb gluten-free pasta
  • 1 lb chicken breast or tofu, cubed Use chicken for a non-vegan version, or tofu for a vegan option.
Vegetables and Broth
  • 2 cups vegetables (bell peppers, zucchini, spinach) Feel free to swap out veggies based on your preference.
  • 1 can diced tomatoes
  • 2 cups vegetable or chicken broth
Seasonings
  • 1 teaspoon garlic powder Toasted garlic adds depth of flavor.
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • Olive oil For sautéing.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add cubed chicken or tofu and cook until browned.
Cooking
  1. Stir in diced tomatoes, vegetables, broth, garlic powder, onion powder, salt, and pepper.
  2. Bring to a boil, then reduce heat and let simmer for about 10-15 minutes.
  3. Meanwhile, cook gluten-free pasta according to package instructions.
  4. Once pasta is cooked, drain and add to the pot.
  5. Stir everything together and serve hot.

Notes

You can make this meal ahead of time! It keeps well in the fridge for up to 4 days or you can freeze it for about 3 months. When reheating, use the stove or microwave.
