- In a large pot, heat olive oil over medium heat.
- Add cubed chicken or tofu and cook until browned.
Cooking
- Stir in diced tomatoes, vegetables, broth, garlic powder, onion powder, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 10-15 minutes.
- Meanwhile, cook gluten-free pasta according to package instructions.
- Once pasta is cooked, drain and add to the pot.
- Stir everything together and serve hot.
Notes
You can make this meal ahead of time! It keeps well in the fridge for up to 4 days or you can freeze it for about 3 months. When reheating, use the stove or microwave.
