  • 1/2 cup brewed coffee (cooled)
  • 2 tablespoons maple syrup or sweetener of choice
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a bowl, whisk together coconut milk, brewed coffee, maple syrup, vanilla extract, and a pinch of salt until smooth.
  2. Stir in the chia seeds until they are well mixed.
  3. Let the mixture sit for about 10 minutes, then stir again to prevent clumping.
  4. Cover the bowl and refrigerate for at least 4 hours or overnight.
Serving
  1. Serve chilled, optionally topping with fruits, nuts, or cocoa powder.

Notes

Store in an airtight container in the fridge for up to 5 days. Stir before serving as it may thicken.
