  • 1 pound ground beef
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large egg
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, soak the breadcrumbs in milk for about 10 minutes.
  3. In a large bowl, combine the ground beef, Parmesan cheese, soaked breadcrumbs, parsley, garlic powder, onion powder, egg, salt, and pepper.
  4. Mix until just combined. Form into meatballs, about 1 inch in diameter.
  5. Place on a baking sheet lined with parchment paper.
Cooking
  1. Bake for about 20 minutes or until cooked through.
  2. Serve with pasta or in a sub.

Notes

For added moisture, consider a splash of broth. You can mix ground beef with pork for more flavor, or add red pepper flakes for spice. Variations include using lentils or chickpeas for vegan meatballs.
