  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 1 cup ditalini pasta Substitute with any small pasta if desired.
  • 4 cups chicken broth Homemade broth enhances flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme Fresh thyme can be used for better flavor.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onions, carrots, and celery; sauté until softened.
Cooking
  1. Pour in the chicken broth and bring to a boil.
  2. Stir in the ditalini pasta, shredded chicken, salt, pepper, and thyme.
  3. Reduce heat and simmer for about 10-12 minutes, until pasta is cooked.
  4. Serve warm.

Notes
