  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract

  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until the mixture is smooth.
  5. Gradually mix the dry ingredients into your wet mixture until just combined.
  6. Prepare the filling by combining the brown sugar and cinnamon in a small bowl.
  7. Spread half of the dough on parchment paper or a floured surface. Sprinkle with cinnamon filling and roll it up tightly.
  8. Slice into rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until they are golden brown.

Notes

These cookies can be drizzled with cream cheese frosting for an extra treat. Store in an airtight container for up to a week or freeze for up to three months.
