Ingredients
  

Brownie Ingredients
  • 1 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 4 large eggs Use room temperature for better blending
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
Mousse Ingredients
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 cup semi-sweet chocolate chips

Method
 

Baking the Brownies
  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix cocoa powder, sugar, melted butter, eggs, and vanilla extract until well combined.
  3. Stir in flour and salt until just combined; don’t overmix!
  4. Pour the batter into the prepared baking pan and spread evenly. Bake for 20-25 minutes.
  5. Let the brownies cool completely in the pan.
Making the Mousse
  1. In another bowl, whip the heavy cream and powdered sugar until soft peaks form.
  2. Fold in the semi-sweet chocolate chips.
  3. Spread the mousse layer over the cooled brownies.
  4. Chill in the refrigerator for at least 2 hours before serving.
  5. Optionally, top with additional chocolate ganache before serving.

Notes

These brownies can be kept in the fridge for about 4-5 days. Freeze leftovers for up to three months. Tips to enhance your brownies: use room temperature eggs, try dark chocolate chips for more intensity, add a pinch of cinnamon, or experiment with peppermint extract.
