Method
Baking the Brownies
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, mix cocoa powder, sugar, melted butter, eggs, and vanilla extract until well combined.
- Stir in flour and salt until just combined; don’t overmix!
- Pour the batter into the prepared baking pan and spread evenly. Bake for 20-25 minutes.
- Let the brownies cool completely in the pan.
Making the Mousse
- In another bowl, whip the heavy cream and powdered sugar until soft peaks form.
- Fold in the semi-sweet chocolate chips.
- Spread the mousse layer over the cooled brownies.
- Chill in the refrigerator for at least 2 hours before serving.
- Optionally, top with additional chocolate ganache before serving.
Notes
These brownies can be kept in the fridge for about 4-5 days. Freeze leftovers for up to three months. Tips to enhance your brownies: use room temperature eggs, try dark chocolate chips for more intensity, add a pinch of cinnamon, or experiment with peppermint extract.
