Ingredients
  

Salad Ingredients
  • 1 can 15-ounce can chickpeas, drained and rinsed Rinse well to reduce sodium
  • 1 avocado, pitted and diced Use just ripe avocado for best texture
  • 4 ounces feta cheese, crumbled Can substitute with goat cheese or vegan alternative
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped Fresh herbs enhance flavor
  • 1/4 cup fresh mint, chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the chickpeas, avocado, feta cheese, red onion, parsley, and mint.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, garlic, and oregano. Season with salt and pepper to taste.
  3. Pour the dressing over the salad ingredients.
  4. Gently toss until everything is well coated.
  5. Serve immediately or chill for later.

Notes

For extra flavor, add crushed red pepper flakes or cherry tomatoes. Can store in the fridge for up to 2 days, but avocados may brown.
