- In a large bowl, combine the chickpeas, avocado, feta cheese, red onion, parsley, and mint.
- In a small bowl or jar, whisk together the olive oil, lemon juice, garlic, and oregano. Season with salt and pepper to taste.
- Pour the dressing over the salad ingredients.
- Gently toss until everything is well coated.
- Serve immediately or chill for later.
Notes
For extra flavor, add crushed red pepper flakes or cherry tomatoes. Can store in the fridge for up to 2 days, but avocados may brown.
