  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage (sliced) Use your favorite flavor of chicken sausage.
  • 2 cups broccoli florets
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese Add more for a richer flavor.
  • 2 tablespoons fresh parsley (chopped) For garnish.

Method
 

Cooking
  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced chicken sausage and cook for 5–7 minutes until browned.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Toss in broccoli florets and cook for 2–3 minutes until they start to soften.
  5. Incorporate orzo, chicken broth, Italian seasoning, salt, and pepper; bring to a boil, then reduce to a simmer.
  6. Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  7. Remove from heat and stir in Parmesan cheese until melted and well combined.
  8. Garnish with fresh parsley and serve hot.

Notes

For a creamier version, add a splash of heavy cream just before serving. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
