  • 3-4 pieces boneless, skinless chicken breasts Cut into bite-sized pieces.
  • 1 pack Lo Mein noodles (fresh or dried) Use according to package instructions.
  • 1 piece red bell pepper Chopped.
  • 1 piece yellow bell pepper Chopped.
  • 2 pieces carrots (thinly sliced) Sliced into thin strips.
  • 2 pieces green onions (chopped) Chopped.
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Method
 

Preparation
  1. Gather all ingredients and chop vegetables into bite-sized pieces.
Cooking Noodles
  1. Boil Lo Mein noodles according to package instructions until al dente; drain and set aside.
Cooking Chicken
  1. Heat a large skillet or wok over medium-high heat. Add oil and sauté the chicken until golden brown and fully cooked, about 6–8 minutes. Remove from skillet.
Stir-Frying Veggies
  1. In the same pan, stir-fry bell peppers, carrots, and green onions until tender yet crisp, about 3–4 minutes.
Combining Everything
  1. Return cooked chicken to the skillet with vegetables. Add lo mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices. Toss everything together until well mixed.
Serving
  1. Serve hot with extra soy sauce if desired.

Notes

For a vibrant presentation, add a sprinkle of sesame seeds and some extra green onions before serving. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to three months.
