  • 2 cups shredded chicken
  • 1 package (16 oz) gnocchi
  • 2 cups mixed vegetables (carrots, celery, spinach)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced For added flavor, sauté until fragrant.
  • 4 cups chicken broth
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk.
  • 1 teaspoon dried thyme
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add the shredded chicken and mixed vegetables to the pot, and cook for a few minutes until they start to soften.
  4. Stir in the chicken broth and bring to a simmer.
  5. Add the gnocchi and cook according to the package instructions.
  6. Once gnocchi is cooked, stir in the heavy cream and dried thyme.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy your homemade Chicken Gnocchi Soup!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat gently on the stove to maintain creaminess.
