  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 can (10.75 oz) cream of mushroom soup

  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped (for garnish)

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

  2. Transfer the mixture to the prepared baking dish. Cover with aluminum foil and bake for 25 minutes.

  4. Garnish with chopped parsley before serving.

Notes

This casserole can be stored in the fridge for about 3-4 days in an airtight container. It is also freezer-friendly for up to 3 months. When reheating, add a splash of broth to keep it creamy. For variations, try using ground turkey or black beans and diced peppers.
